How much oil do you put in with an oil and filter change. I have heard the 1300 uses a gallon on the nose.
Is a gallon good for the ST1100 too or shoudl I fill, check, repeat?

Simple answer (for the 1300) .... new filter installed, one (1) gallon of oil, secure all the Tupperware, go ride ...

I know the book says "1.1 gallon", or some such, but don't sweat it.

1 gallon. Done. :)

1 gallon and a "little bit more" always seems to work for me. I let it run for a couple of minutes and add a bit more if needed. The last time I changed the oil, I had a let a little bit out.

A gallon for the 1100 is just fine. But, I always had time for mine to set and drain over night, so maybe I got a tad more drained out. Look at it this way, the book calls for 3.9 quarts (with a new filter) there are 32 ounces in a quart. 90 per cent of one quart is 28.8 ounces. So if you use 4 quarts (1 gallon) you're putting in 3.2 ounces more than the book says. 3.2 ounces is less than half a cup. Now, in a closed hydraulic system, overfilling by any amount wouldn't work. but you're going to have trouble convincing me that 3.2 ounces spread across the surface area of the 1100s sump is going to raise the oil level enough to be an issue....

just my 2 cents, ymmv, etc.
