On the ST1300, before I get into the turn signals to add more lights, wondering about the quick disconnect plug, is it a two or three wire plug?

You mean the one in the mirror assembly? That's a two wire.
Also, I noticed that the wire colours are reversed on mine - opposite on the male and female sides of the plug. Just one to watch.

There's two connectors for each turn signal; a one-wire and a two-wire.

They are 3-wire on US/Can spec bikes due to the parking lights also being ran there.
I cut the parking light terminals on both bulbs so that the lights are only lit when signalling. Helps the cagers see where I am going easily. This is how they are done in the rest of the world. Stupid DOT.
Parking lights are already in the headlight cluster, as you already know.

My bike is UK spec - no running lights in the mirrors, only turn signals.
