I already have my K&N air filter, I'll have my new FPR next week but my Staintunes won't be in for another month. Should I wait and install them all at once or can I go ahead and install the K&N and the FPR now?

Installing now what you have should be OK. The FPR should not run the fuel mixture that much richer that you'll have a problem within the month it takes for the Staintunes to reach you.
If you are really concerned about this, call Tom at Turbo City and ask him for advice.

Install them now, then the pipes in a month...u wont hurt anything.

The 61 psi regulator will pose no problem in this application. In original testing I ran a 68 psi regulator for about 2 months with no problems.
