This is what I wear for winter and really wet conditions. The Gore-tex is fantastic and well worth the additional expense.

My only criticism is of the trousers, where the knee protection is about 10cm too low (or maybe my thighs are too short?) and I need to hitch this up into position on mounting my STeed.

The removable outer collar is a good idea.

For colder conditions I recommend wearing a couple of layers of Icebreaker (top) and Icebreaker longjohns. I also wear an Icebreaker neck tube in cooler conditions as well.
