I want to get a GPS for my bike, the Garmin StreetPilot 2610 comes highly recommended, but I am told it is not Mac compatible. What do you Apple/Macintosh users recommend?

You could try VirtualPC 6.0x or higher, but I would not recommend it for the GPS software. Use someone else's PC with a CD player and connect the GPS through the USB port.
For the maps, you can use VirtualPC (if you have literally hours to kill), or use someone else's PC and accomplish that task in minutes.
If you use VirtualPC for the maps, use a USB FlashCard reader attached to the Mac's USB port to load the maps. DO NOT TRY TO LOAD MAPS THROUGH THE GPS. Trust me on this.
Save yourself some pain by getting a 2 GB FlashCard and loading all of the North American maps on it the first time.
One caveat: if your GPS goes wonky and cannot find your position, shut off the GPS. Take out the FlashCard, then put it back into the GPS. There seems to be an occasional corrosion problem in higher humidity or cold weather. Reseating the card takes care of this.
