In reading different posts about advanced riding techniques, I searched for opportunities in Eastern/Southern Ontario. I found one school that is known for racing training. The FAST riding school. I know a few people that went to train to get their racing license there and were happy with it all.
I have other friends that go to the same track (Shannonville) to train or race vintage bikes.

I signed up for the course and drove down Sunday. Caught a thunder storm on the way there :( waddaya gonna do... Stayed overnite in Belleville and got to the track at 8:15 Monday.
It is in part sponsored by HD, so, expect the company of pirates. I got lucky, normally, the classes have 30+ riders. We were 10; lots of practice!
Bikes: ST1100, BMW 1150GS, Virago, Bandit, GSR500, 3 HD Electroglides, Road King and Fatboy. 4 riders had over 25 years experience, 3 women (Virago, Bandit and GSR) with limited experience.
Everyone learned something and we all improved. With the trip there and back, hotel, dinner and the course, its a pricey day, a little over $500. but it was a good experience.

You can check them out at the following addresses:

If you are near Canada's National Capital area, there are a range of courses offered by the Ottawa Safety Council for riders of all levels. The intro course got me my 'M' and the refresher was worth every penny. The web site is not always up to date and the folks on the phone are very helpful.

I took an ERC with them last year which was very good and they also offer track type training at Calabogie Motorsports Park.
Some day when I have the time, I would like to do some instructing with them to help them out as they are always looking for volunteers with lots of riding experience.

I went to a BBQ at a friend's place in Wodlawn, near Constance Bay, after running the Calabogie boogy. As I drove down Dunrobin road, they were holding a class in an industrial parking lot. Had to be 50 bikes.
There is nothing like that near here. Good to communicate when we find a good place to recommend.

I took the same course at FAST - different day.

Had a great time, improved my skills, confidence and got to know the bike a bit better. It's great when the track has been swept clean and you know there are no obstacles around the next curve.

I'd recommend checking them out: www.fastridingschool.com/english/

They take some photos during the day - here's a few that I posted on Flickr:
