How do you know the battery is ok? Have you had it load tested?

The ignition switch certainly could be the problem but it would only be a guess. Just not enough info to say conclusively. Does the clock work when the switch is in the ACC position?

You could try blasting the switch with some electrical contact cleaner but I don't know if the contacts are sealed separately from the switch. Then follow up with some appropriate lubricant. That and a load test if you haven't already done one.

There are two things you should check.
The first is the 4-pin connection on the left side under the side cover. This connection is a known trouble point on the ST1100 and most will overheat and fail. Look for melted wires and connections for the main power relay.

The second trouble spot is the connections under the fuel tank cover up near the t-stem. There are a couple of connections there, one is for the key switch that are also known to give problems due to corrosion.

I am sure that one of these points is causing your problems.

batteries can be fine one minute, dead the next. Your symptoms suggest either your battery is weak, or you have a lot of corrosion in one or more of your electrical connections. If it suddenly stopped then its more likely to be the battery, since corrosion will typically happen more gradually. However, it could be something as simple as a loose battery connection, check both battery terminals first. Then check the electrical connectors mentioned in bdalameda's post for corrosion.

Here is a link for the red wire mentioned. The modification is easy and cheap, about $10 for parts in the US.

Go to http://www.st-riders.net/ and enter red wire by-pass mod in the search space. There is text and pictures.
