I'd guess that the car tire sidewall limitation would show up at the massive lean angles that racers achieve. Doubtful that an ST can push the tires to the point where they roll over off the tread completely and start running on the sidewall, even on a track like DCTC. Simply not enough clearance with the ST, especially with 2 up. But at 60+ degree lean???

Just curious about their inclination to install a non-motorcycle tire.
Money. They get paid to mount a tire. It's what they do. Now some shops won't, but ask around and find one that will. Or some car shops will, if they have a changer that can handle a mc rim.

Is mounting a car tire on an ST's rim significantly more difficult (labor wise - i.e. does it require more muscle or any different techniques or tools) than a motorcycle tire?

Can be... but I've heard some MC tires are a hard stretch too.

When you installed the GYTT, did you have to modify the swingarm or sand down the sides of the tire to eliminate rubbing?

For the GYTT I did have to sand down the swing arm a just a bit. The Hankook fit just fine, but not the GYTT. It's just cast flashing you are rmeoving, some bikes are cast more clean and it's not a problem to install the tire.
