With a tape measure.
Back to what you were probably asking. Some measure the actual screen, bottom to top. I think this is generally the way to do it.
Others measure perpendicularly from the dash to the top of the screen.

Sorry it posted before I had finished. yer looking at getting a taller screen but there seems to different ways of checking height .if anyone has any suggestions on a screen for a 6'3'' guy that would be helpful cheers

I'm 6'2" and I use a Clearview Gen 3 XL. From my original invoice -
GT X Large - 24.5" L
The measurement appears to be from the lower front edge (at the garnish) to the top (just measured it on one of my ST1100s).
I don't know if they are available on your side of the pond or not.
