I saw that video a few months back- if I was on the lead bike, I likely would have weighed the odds of me killing myself (pretty high) and gave up the chase if I saw how ‘adhesive’ the motor officer was.

Slow the video down to REAL speed, they might be going 20-30mph... LOL
I realized the same thing but still the odds were quite high to have a serious life altering mistake at 20-30 mph. The Hurt Report found an average speed of impact was just 22 mph.

At first I thought she was too busy hanging on to be terrified, but the way she handled those moguls...er...speed bumps changed my mind. And she kept looking back, not what I'd expect of someone who was terrified. She is no beginner to high speed riding. Some pretty expert riding on everyone's account here. I was surprised at the ending - no blood, guts or gore spread out on the pavement.

The motor cop's call sign is ICEMAN. The poster is probably the one who sped that up with most people thinking it was real time.

I was more amazed by the tight spots they traversed! Yes, real speed was quite slower. Still amazing no one got into a side impact coming out of alleys or even a head on.

the greatest skill was the passenger. looking backwards while 6 inches or more in the air off the seat!

Regardless of video speed and whether an actual chase or staged video . . . these are two very competent riders. IMO
I was pretty impressed at the skill level of both traversing those narrow passages and the suspect veering around traffic. Even slowed to normal/near normal it's somewhat surprising there was only the one get-off. Had that actually been the speed the rider should have been beaten within an inch of life for riding like that with a pillion. But all's well.
