poor roll on at 100

So I got the old girl runnin again. A new radiator and rebuilt waterpump helped alot with that pesky overheating thing. Had to pull the carbs to replace those hoses under there, then new adapters? cause the old ones were trash. Then new jets cause they were all gummed up from sitting. Same size. Now it runs just ok . Doesnt have quite the snap it used to , pops and snorts when you roll out of the throttle,and when you nail it at around 100 it just falls on its face. What did I screw up?? What should I look for ? I synced the carbs with a Unisyn and it appears I have a valve seal leak on #4 says the dancing vac guage. Lets hear all the theories..

What Year is it? What size jets?
Did you clean and make sure the Choke on all 4 carbs are releasing all the way?
Were the Idle cutoffs replaced and did you clean ALL the passages in the Carbs thoroughly ?
Maybe a check on all the grounds is in order as I hear that can cause coils to misfire.
Stock air filter?
Those are all the wild guesses I can come up with at the moment.
