I bought an OEM Timing Belt when I bought my bike 6 years ago cause I figured that the bely would need to be changed at 60,000 miles. Needless to say I found out what the maintenance schedule says so I have a new timing belt that has been sitting in a plastic bag for 6 years and now is the time to change it. Should I use that belt or get a new, new one?

No different that hanging on a wall at parts house or dealer. If it looks good use it. The one on your bike has aged 6 years and it held up well.

If it was in a bag it shoud be fine, If there are no apparent cracks in the rubber then exposure to the environment hasn't degraded the rubber. Use it.
