Thanks to everyone that chimed in with advice, information forwarding and sharing, helpful tips and tricks. Without these forums and the support they provide I doubt my 40 amper upgrade would have went nearly as smoothly as it did. Not that it was a seamless ez-pz one-afternoon 3-beer job by any means.

The most important bit of advice I can give to anyone that's about to attempt this job is to please please please read as much of the information available regarding the alternator before starting. This may even apply even before buying parts and assembling the bits needed before starting, as I purchased a complete alternator shaft assembly, as well as the adapter plate from the eBay seller listed above that wasn't needed (thanks for understanding fz700a).
Buy the complete alt. shaft assembly if you find one. I did and from what I understand it saved me from a decent amount of unpleasant work (thank you John H).
Two people WILL make reassembly easier. Especially if your helper has smaller hands than mine.
If you're anything like me, mechanically inclined but by no means a technician and at times pretty easily distracted, give yourself a deadline that has several days dedicated blocked out to do the job. I didn't run a timer on my work time and I kind of wish I did, but it was at a guess a 25-30-hour process for me.
You will come across @John OoSTerhuis in the forums. This gentleman is the fella to guide you through this journey, as well as loan you the alt. upgrade kit. Without that kit and the community that John and his friends have built here, I would have been lost and probably had put my ST out to pasture.
