I ran out of gas today with the bike saying it had about two gallons left in it. So I want to replace the thermistor. Is there a recommendation on the replacement item?

The thermister might not be bad. As I understand, once the float gauge hits bottom the thermister takes over. If you turn the bike off and back on there is no real way for it to know exactly how much fuel is left.

Perhaps @Igofar can chime in with his wisdom. :) (I've been wrong before...)
 
How many bars did you have showing or was the last one flashing? Two gallons is close to 8 litres you should have had left.

Sometimes it showed 2 bars, other times it said 50 miles but the tank was dry.
 
Unless you damaged it, there is probably nothing wrong with it other than dirt/film on it the face of the gauge.
Gently take a soft pencil eraser and clean the surface of the gauge.
It should return to normal again.
