SAE weight is a poor way to compare fork oil performance.

I don't really care. It's a starting point and all that's important is that it's good enough for me. If somebody tries a given oil and it seems to work for them then followup questions can narrow it down. For 99% of us it will still boil down to trial and error.

But if I'm having trouble sleeping I'll check out that site again.

As a walk in consumer I just went to the local MC retailer and bought Bel-Ray 5,7,10 wt oils in the event I had to blend them. The link you sent is a great sources of information. Guess I got lucky not by cheaping out on the oil. Looks like Bel Ray is one of the more consistent ones. Doesn't surprise me that manufactures actuals vary so much from the SAE ratings. I wonder who did the actual testing for this chart.
