I've yet to have had the honor, but I've read lots of firsthand accounts.
From all I've learned from these, bigger bikes are better, at least in survival odds for the rider. (Who cares about the deer... they can be replaced!)
I'm also glad that you survived, and I hope your insurance is more kind and thoughtful towards you than the hoofed animal was.
They are not. Allstate's estimate is comically low, like $1500, ignoring obviously damaged items and some of the largest, including the radiator and oil cooler, which are actually leaking.. So on top of the stress of everything else, now I've got to deal with this crap and probably get my lawyer involved. I wouild like to think they are just incompetent, but this appears to just be bad faith.

Unfortunately, you don't know how good your insurance is until you have to use.
I will say that Progressive treated me pretty decently when my ST1100 was totaled from the deer strike.
But I did find out about coverages that I didn't have or were too low! ;)
 
The saga continues. Whether through overwhelming incompetence or bad faith to the point of fraud, Allstate is sticking by their ridiculous estimate with just 'Well the dealer can ask for an adjustment.' And the cherry on top is that my bike still hasn't arrived at the shop a full week after promised. So, yeah. Anyone know who I should switch to after I get through this $#!% show? Sadly Progressive is off the table, since they declined to renew because I had two claims (two previous deer) in 36 months. Said even though it wasn't my fault, that's their policy.

I heard good things about a company called Dairyland, but I have not investigated them yet.

All I can suggest is that make sure you have high enough policy limits, including on your uninsured/under-insured motorist coverage, so that if some guy with the bare state minimum coverage runs you over and you have medical bills and lost income that’s twice as high as what his policy limits are —-you aren’t SOL* or forced to try to sue him individually rather than settling with the insurance company for the maximum of the policy .

I’m learning about these issues as we speak,
because six weeks ago, my bike had some impromptu bodywork and frame modification done by a fly-by-night distracted driver.

When I got my first bike at 16, I had Dairyland in Alabama. Most young kids don't know diddly about insurance -- I surely did not.
When I went into the Navy at 18, one of my early assignments was Newport News, VA. One of my shipmates took my bike for a short ride, much shorter than he anticipated, and totaled it.
That's when I learned Dairyland didn't cover vehicles in Virginia.
Damn, that was a painful way to learn I should read my policy. But lessons learned hard should be learned well.
All this sad story to say, Dairyland (and any other insurance company) may or may not offer coverage in YOUR state.
And to repeat the sage words of @Uncle Phil -- know your coverage, including limitations and exceptions.
