I thought I'd give an update on my situation. I've been riding my bike again to work/back for the past month+. I had a leaking head bolt issue at first, but fortunately, my new job has a machine shop and the guy who works there is also a motorcycle rider. He cleaned up my bolt and I bought a new washer and that stopped the leak. I've bought a few replacement parts and took off the damaged cosmetic pieces from the left-side. It took a while, but I bought a new stock left-mirror and my machine shop buddy was able to make me a custom mount for it since the original mounting for the mirror was destroyed in the accident, all that was left was an open bar. (pictures below) So for the past few days, I've finally had a left-side mirror again, which makes me feel a lot safer and more comfortable.
My ribs have healed fine with no major after-issues. I still would love to have a couple grand to make her all nice and shiny again, but at least she's rideable and serves the purpose for which I bought her, which is saving me tons of money on gas and wear/tear on my beat-up old car. I went on a ride with my son last weekend, we went on a picnic and scenic ride along the ocean, it was a great trip. (although we did have a bit of trouble with the Cardo communicators for our helmets)
The priority right now is getting a replacement windshield and getting a new set of grips. I'm tired of my hands going numb after 20 minutes of riding. I'm debating on just going back to stock grips or switching to one of the others that people have mentioned on here, like the BMW grips. Anything would be better than the ones I have now.
I also took a couple of trips back to the scene of my accident and on the last trip, I took video of the lane/shoulder where I was riding. I'll put some pictures below from the video and you can clearly see where the edge/shoulder goes from decently smooth to completely jacked up in a fraction of an inch. My son wants me to sue Caltrans, not that it would ever work.
The front brakes are starting to get a bit loose, so I'll need to get some new pads on them soon.
